I have a LOT of potatoes. It is just the two of us now, my son and I, and he doesn't love potatoes as much as Darrell and I. My potatoes are almost ready for planting they are so old and I know cooked potatoes don't freeze well. Please help! I hate seeing them go to waste.

We like to dice them, pan fry, then add beaten eggs. Season with what you like and either just cook the eggs in the pan, or, if it's oven safe or you want to transfer the potatoes to a casserole and pour eggs over, pop in oven at 350 for about 30 minutes. I like to grate cheese. I'll also dice and add veggies to the potatoes, especially if it's more lunch or dinner rather than breakfast.
If I was at home I'd share a recipe for Kibbe Batata, which is also really good. I'll see if I remember later.
