I am learning to find alternatives to foods i enjoy, either by altering that item, or finding a totally new thing in its place. Waffles = chaffles I think it is important to use real food. I prefer butter to oleo and such. While I prefer this it is not always an option for me. I use splenda or swerve instead of sugar. I love eating nuts. The recommended amount of almonds per day is 10. Walnuts is higher.. .17 I think. So to snack I need to mix them.
I also need to remember that I do need some carbs. I could make cookies with almond flour, splenda and Lily's stevia based dark chocolate chips (which are AHMAZING btw) and have keto friendly cookies. Drink only water, eat nothing but eggs and veggies and my BG drops like a stone. I need a touch of something. Cheese, which has a tiny amount of carbs or something.
As a beginner I am seeing my readings go all over the place. I just tested. 1 finger, left hand was 285. Right hand was 211. Then same finger right hand, 50, then 265. (This finger wanted to keep on donating to the cause! I only poked it once and could have gotten 4 readings with no prodding!) I still ahve not figured this out so i am playing with my strips, testing more than needed but trying to learn the whys and wherefores of the readings. I have learned that readings can be affected by any residue left on the finger. Even the alcohol from the wipe, if not dry may influence it.

That is good to know, about residue on the finger. I will keep that in mind the next time I do a reading!

We got a spaghetti squash, baked it in the oven, then used the insides to make "baked spaghetti." You just scoop out the spaghetti-like squash and add sauce and cheese, then bake in the oven until the cheese is melted. You can add some meat if you want.
It's more like angel hair pasta instead of spaghetti, but I actually like that better. It's so, so good, and well worth the time it takes to prepare.
