This puff pancake recipe is a big favorite in our house. I have made it with many fruits, not just apples. Pears, pineapple... everything has been good. The only thing that doesn't work great is using dried or freeze-dried fruit. You *really* need to rehydrate them first, or the pancake sets up very weird (although my family ate the weird versions every single time...).
Anyway, yesterday I needed to make dinner in the slow cooker and I was so bored with typical slow cooker fare. So I sprayed the slow cooker with non-stick spray, put some frozen peach slices in the bottom, and poured the batter over. I left it on high for two and a half hours, and it came out PERFECT.
I'm wondering now about a savory version, maybe with some veggies, ham and cheese. Hmm...
