DIABETIC BROWNIES
1/2 c. butter
2 1/2 tbsp. liquid sweetener
2 sqs. unsweetened chocolate, melted
2 eggs
1 1/2 tsp. vanilla
3/4 c. sifted flour
1 tsp. baking powder
1/2 c. chopped nuts
Cream butter and sweetener until fluffy. Add melted chocolate. Beat until smooth. Beat in eggs and vanilla. Add flour and baking powder and nuts. Place in 8 x 8 inch pan. Bake at 350 degrees for 30 minutes
Not So Guilty Brownies
3/4 cup all-purpose flour
3/4 cup sugar
1/4 cup unsweetened cocoa
1/2 tsp baking powder
1/4 tsp salt
1/4 cup oil
2 tsp chocolate extract or flavor
2 eggs
Heat oven to 350 ° F. Grease bottom only of 8-inch square pan. Combine all brownie ingredients in a medium bowl and mix well. Spread in greased pan.
Bake at 350 ° F. for 13-18 minutes, or until top is dry and springs back when touched lightly in center. Cool for 15 minutes.
Espresso Brownies
1/2 cup margarine
1 cup sugar
1 large egg
1 large egg white
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/2 tablespoon instant espresso coffee powder (see note above)
1/3 C cocoa
1 teaspoon baking powder
1/3 cup semisweet chocolate chips
Preheat oven to 350°F. Coat a 9x9x2-inch pan with nonstick cooking spray.
In a large mixing bowl, beat the margarine, sugar, egg, egg white and vanilla until light and fluffy. Combine flour, cocoa, espresso powder and baking powder. Gradually add the dry ingredients to egg mixture, mixing well. Stir in chocolate chips. Pour batter into prepared pan. Bake for 20 to 25 minutes or until toothpick inserted comes out clean.
