Hello all, I am looking for meal ideas. I am overweight. I don’t have the energy or motivation for complicated prep or cooking. My kitchen is so small I can sit on my stool at the sink and teach the stove. I have little to no prep space. Helllllpppppp!!!!

What do you like to eat? Do you use a crock pot? Do you have special dietary needs?
Maybe you can get a cheap cutting board that lays over the sink to give you a place for easy prep.
Lots of foods can be purchased already prepped--our store carries frozen diced onions and other veggies.

As Rebekah suggested get a cutting board that'll fit over the sink or buy already diced up veggies. I know the diced veggies may be more expensive but if it enables you to eat better and not use DoorDash then it'd be worth it. You can use a skillet with lid for shepherd's pie so the browning of meat and "baking" is done in one pan. Just turn temp down really low for the baking. I use my electric skillet for that. Less dishes to wash.

Would you be able to get together with some other ladies and cook together? Or each of you make a meal (enough for a helping for each person) and share with each other so you each have several different meals to freeze for later or eat for the week?

When the weather isn't so hot, I do a lot of sheet pan meals. Put your seasoned chicken and sweet or regular potatoes diced and seasoned along with root veggies on the same pan, drizzled with olive oil and whatever herbs, spices or seasonings your like and bake in the oven. Easy peasy. For summer, I do a lot of salad meals, grilled chicken along with whatever fresh lettuce and other veggies you have. I also do taco salad with ground beef, corn, lettuce, tomato and black beans. I use canned corn and black beans to keep it simple. Add a mild salsa. I will post more ideas as I think of them. I often use my kitchen table for food prep as I have little counter space as well.
