Potato Bars
1 pound ground beef
1 medium onion, chopped
1/2 cup ketchup
1/2 cup water
1 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon mustard
10 medium potatoes
cheese of your choice
2 tablespoons Ranch dressing
Fry and drain ground beef and onions. Add ketchup, water, brown sugar, chili powder and mustard. Simmer for 5 minutes. Set aside and keep hot. Cook, mash and season potatoes to taste (or use leftover mashed potatoes). Spread in a cake pan and cover with meat mixture. Top with cheese. Drizzle ranch dressing over the top. Bake at 350 degrees until hot.
Beef-A-Roni
1 1/2 lbs. ground beef
1 small onion, chopped
1 1/2 tsp. chili powder
1/2 tsp. garlic powder
good splash of worcestershire sauce
8 oz. can tomato sauce
3 T. ketchup
salt and pepper to taste
1 1/2 C. dry large elbow macaroni, cooked in boiling water and drained well
Brown the ground beef in a skillet, drain off the grease and add the onion, cook for 5 minutes to soften. Stir in the chili powder, garlic powder and worcestershire sauce. Stir in the tomato sauce and ketchup. Season with salt and pepper to taste then stir in the drained macaroni and combine well.
Ground Beef & Yellow Squash Dressing
1 lb. ground beef
2 T. butter
1 medium onion, chopped
3 medium yellow squash, cubed
10.5 oz. can cream of mushroom soup
2 C. crumbled cornbread
2 large eggs, beaten
1/4 soup can half & half (use the empty soup can to measure)
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. ground sage
1 C. shredded cheddar cheese
Brown the ground beef in a skillet, break it up as it cooks. Drain the grease from the meat and put the meat in a mixing bowl. To the skillet add the butter and melt it over med. high heat. Add the onion and squash and cook till tender, about 6-7 minutes. Add to the bowl along with the remaining ingredients. Stir to combine well. Pour into a lightly greased 3 quart baking dish. Bake in a 375 degree oven for 40 minutes.
Poor Man’s Stew
1 lb. ground beef browned and drained
1.5 lbs potatoes diced large
3 carrots sliced
1 onion diced
1 garlic clove minced (I had this on hand already)
6 oz. can tomato paste
2 cups water
1 tsp. salt
¼ tsp. pepper
1 tsp. onion powder
1 tsp. dried oregano
Add the cooked ground beef, potatoes, carrots, onions, and garlic to a 5-quart or larger slow cooker. In a small bowl whisk together the tomato paste, water, salt, pepper, onion powder and oregano. Pour this mixture over everything in the slow cooker. Stir. Cover and cook on LOW for 7 hours, without opening the lid during the cooking time. Serve with buttered sandwich bread.
Easy Beef Supper
1-1/2 pounds ground beef
1 medium onion, chopped
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 package (8 ounces) cream cheese, cubed
1 cup milk
1 teaspoon beef bouillon granules
1/4 teaspoon pepper
4-1/2 cups uncooked wide egg noodles
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the corn, soup, cream cheese, milk, bouillon and pepper. Cook and stir until cheese is melted. Meanwhile, cook noodles according to package directions; rinse and drain. Add to skillet; heat through.
Poor Man’s Supper
1 pound ground beef
1/4 teaspoon pepper
1/4 teaspoon garlic powder
5 large potatoes, peeled and sliced
1 large onion, sliced
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 cup 2% milk
Minced fresh parsley
In a large skillet, cook beef over medium heat until no longer pink; drain. Season with pepper and garlic powder. Layer the beef, potatoes and onion slices in a shallow 2-qt. baking dish. Combine soup and milk; pour over all. Cover and bake at 350° for 1-1/4 hours or until potatoes are tender. Garnish with parsley.
Lentil Stew
1 cup dried lentils, rinsed
2-1/2 cups water
2 teaspoons beef bouillon granules
1/2 pound ground beef, cooked and drained
2 medium carrots, sliced
2 cups tomato juice
1/2 teaspoon dried oregano
1/2 cup chopped onion
2 celery ribs, chopped
1 garlic clove, minced
In a large saucepan, bring the lentils, water and bouillon to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Stir in the remaining ingredients. Return to a boil; reduce heat and simmer 20-30 minutes longer or until lentils and vegetables are tender.
Hamburger Stroganoff
1 (16 ounce) package egg noodles
1 pound lean ground beef
1 (.75 ounce) packet dry brown gravy mix
1 (8 ounce) package cream cheese
1 (6 ounce) can chopped mushrooms, with liquid
1/2 cup milk
1 (8 ounce) container sour cream
2 (10.75 ounce) cans condensed cream of mushroom soup
Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain. In a skillet over medium heat, brown the ground beef until no pink shows; drain. Mix brown gravy, cream cheese and mushrooms with hamburger until cream cheese has given the mixture a whitish look. Add milk, sour cream, and mushroom soup to cooked pasta. Blend hamburger mixture with pasta.
Dawn's Lasagna
1lb ground beef
2 cloved garlic
1 can tomato paste
2 1/2 cups tomatoes
1 tsp salt
1/4 tsp pepper
1/2 tsp oregano
1 pkg lasagna noodles
8 oz mozzarella
12 oz cottage cheese
Brown ground beef and garlic in skillet. Add tomato paste, tomatoes and spices, cover and simmer 20 minutes. Half-cook noodles and drain. Coat botton of 9x13 pan with thin layer of sauce. In pan, alternate layers of cooked noodles with cheeses and meat sauce. Bake 20-30 minutes at 350.
Baked Bean Casserole
2 large cans of baked beans
1lb of any meat (I’ve used hamburger and sausage, not together though)
4-5 potatoes
1/4 cup brown sugar
1/4 cup ketchup
diced onions and green peppers (if on hand)
Boil potatoes until they are just soft but not falling apart. Drain water from potatoes. Add baked beans, cooked meat, brown sugar, ketchup, onions and peppers. Let it simmer together, about 20-30 minutes.
Dawn's Hamburger Rice-a-Roni Supper
1 lb ground beef - browned
1 box Beef flavor Rice-a-Roni
1 can French style green beans - well drained
1 8oz can tomato sauce
1/2 cup Ketchup
1 1/2 cups water
In a large pot, combine the Rice-a-Roni mix with 2 tbs butter. Saute over medium-high heat until golden brown. Brown ground beef seasoned with salt & pepper in skillet. Drain off fat. Add hamburger meat to Rice-a-Roni mix. Slowly stir in 1 1/2 cups water, tomato sauce, French style green beans, Ketchup and seasoning packet from Rice-a-Roni. Bring to a boil. Cover, reduce heat to low and simmer for 20-25 minutes or until rice is tender and all liquid has been absorbed.
Dawn's Meatloaf
2 pounds ground beef
1 pkg onion soup mix
1/2 sleeve of saltine crackers, crushed finely
garlic salt to taste
1/4 teaspoon ground black pepper
1/4 cup Ketchup
1 egg
dash of ground sage
dash of Worcestershire sauce
1 cup Ketchup (or more if you like it as I do!!!)
Preheat oven to 350 degrees F. In a large bowl, combine the beef, onion soup mix, crushed crackers, garlic salt, ground black pepper, Worcestersire sauce, Ketchup, egg and sage and mix well. Transfer to an ungreased 9x13 inch baking dish. Form into a loaf . Bake at 350F for 1 hour, or until center is completely cooked. Spread cup of Ketchup on top and bake and additional 15-20 minutes.
