Tonight it is too hot to even go outside to grill; the humidity slaps you in the face when you open the door. So tonight will be Miss Maggie's humble helper with a garden salad.

I spatchthingyed (is that a verb?) a chicken this morning and have been marinating it in spices. I was going to grill, but between the weather and the time, I think I'll just roast it in the oven along with some corn on the cob. I'll steam some broccoli and make a green salad, too.

Okay, that's hilarious. I know the filter catches word fragments/character strings that might be profane. But I know that "spatchthingy" is definitely not a verb! I cut the spine out of the chicken to roast it splayed open and flat.

Dh was talking about bringing home pizza but he's not home yet so not sure if he is. There still a few things the ladies from church brought last by last Saturday. There is no way I can cook yet and he is so very busy he can't do more than microwave something.

Tonight will be Korean bibimbap, which requires multiple vegetables and marinated meat cooked in stages, so it is all done in advance. Dinnertime all I have to do is cook the rice or noodles then assemble and heat.

Okay but fair warning; this stuff is SPICY! The basic recipe is fresh bean sprouts, sautéed and at the end, sprinkle in sesame seeds and some sliced green onion. You cut carrot into matchsticks and sauté them, some mushrooms, whatever kind you like, in butter. I also cook some fresh spinach but only til wilted, not soggy. Amounts depend on how many people you are serving. I do all this ahead and put the veggies in separate containers in the fridge til time to serve. Meanwhile, slice sirloin or whatever steak you have, I have even used minute steaks, into very thin slices and marinate the meat in soy sauce, sesame oil, garlic and a bit of sugar. I just eyeball it. When you are ready to make dinner, two choices. Either cook some sticky/glutinous rice or some noodles, whatever you are in the mood for. This dish is forgiving, you can even use other veggies you may have or like, just the bean sprouts are mandatory. Cook the meat. Then in bowls, put the rice or noodles in, add your veggies, arranged nicely in sections, then top with meat and reheat each bowl in the microwave to heat up the veggies. Then comes the sauce, which you can add as much or as little as you like. 4Tablesthingys of Sambal olek, available in the Asian section of most grocery stores 2 Tablesthingys sesame oil 2 Tablesthingys water 2 Tablesthingys brown sugar 2 Tablesthingys of toasted sesame seeds 2 teasthingys rice vinegar 2 teasthingys minced garlic. Mix well and sthingy over then mix it all and eat. This sounds more complicated than it is because everything is pretty much prepped in advance including the sauce. After all is cooked and in the bowls you can add some cilantro if you like it. NO idea why but auto correct will NOT allow me to say the word Sthingy it keeps changing it to thingy, no clue why. That is insane! I give up. Forgot to add that traditionally a fried egg is placed on top, with the yolk still gooey. We don't care for that so we leave it off, but it IS traditional.

Tonight it is warm and muggy and looks like it may rain again, so I am thinking tortas, which requires little effort and I don't need the grill.
