Last night, I made a roselle pie.
We got a big bunch of roselle leaves in our CSA share last week. I looked them up and was surprised to learn they are the leavse from the red hibiscus plant (I drink enough red hibiscus tea - made from the flowers - that I buy it in bulk). The leaves are sour and every recipe (almost) I came across inluded seasonings I don't already have and couldn't easily find in the store. Rather than order ANOTHER speciality item online, I tried the pie recipe.
Here's the thing - it's not a savory (main dish or side dish) pie. It's a dessert.
You cook sugar, water, flour and cinnamon - then add chopped leaves, and cook until they're tender. You blind bake a crust for ten minutes, add the filling, and bake for another half our.
I used granulated stevia for baking instead of sugar and made it all gluten free.
It looks, well, awful. But it tastes fine (sweet and sour - I expected it to be like rhubarb, but it's more like those sour candies DH likes). And it was satisfying. It was sweet and tasty, but no urge to overindulge.
🤷🏻♀️ I never thought of making a pie with greens before.
