Today should be a good pace - not too bad.
I have four lessons - one early morning, one mid morning, and two late afternoon. And then no more lessons until January 2 π
Last night I made one batch of those stevia based cookies. I'm glad the batches are small. I thought the amount of stevia looked small in the recipe. The texture of the cookies was great (always a risk when you don't add sugar), but they weren't remotely sweet. We have lots of spare frosting right now, and a bit of frosting did the trick. I'm going to try at least one other recipe today. I'd like to make two recipes of cookies... but DS has a two-day class starting today to make a buche de noel. Today he'll make the cake/jellyroll portion. Anyway, our kitchen is not made for more than one person to be trying to do anything.
I haven't wrapped any gifts yet. We also didn't get any stocking stuffers yesterday. We made it through all our other errands yesterday afternoon, but the Target we went to was SO packed, I was worried about the lines to exit the parking lot. We didn't even get out of the car. It took us the same amount of time to leave (drive out of) the parking lot as it did to drive all the way to the shopping center! I think we'll try again tomorrow.
Tonight we're going to church for a Longest Night service. I wasn't sure about that, but DH wants to go. I thought he might since his mom passed away a year ago this week. Last year, he actually flew home on the morning of the Longest Night service and wanted to attend, even after a long day of travel. I will need to rethink dinner since there will be another short window both for cooking and eating.

So far today I've done my morning routine and taken a walk. I'm on the second load of clothes to wash and hang. After lunch, I'll do the dish towels. I've also already done a batch of forgotten cookies. Technically they are still in the oven (they stay in the oven for 2 hours with it off). Tonight is Bible study.

I made them with straight stevia (1:1 sub) for a friend a few months ago. They weren't the same, but they were still pretty good. And it was the closest thing to a sweet that he was able to have while he was sick since it made them pretty much 0 carb (it's just egg whites and sugar)

I am a bit annoyed with the non-profit board of directors. I had planned to ask for Thursday off because there is last minute stuff to do, but it turns out that if I am not there my manager (who is disabled and should have had a replacement ages ago) would be all alone in the store all day because everyone else will be gone. Add to that the weather forcast which is dangerous cold and a possible blizzard, they should have just closed down until Tuesday. So I will be working tomorrow from opening til closing so she won't be alone. I still have Friday and Saturday to get things done, so I will survive. My morning routine is done, and when I get home I need to clean the bathroom and do the ironing.

Add to that the weather forcast which is dangerous cold and a possible blizzard, they should have just closed down until Tuesday. Any chance they'll still might cancel? I made three batches of cookies today. They all came out well - the chococlate chip cookies were actually stunning simply because of the flavor and texture. So much like regular cookies. DS2 tried a "sugar" cookie and he was completely surprised when I told him it was all stevia. I want to get through the other recipes and try to "fix" the recipe I made last night, then I thought I'd share the recipes here.

Outside of church tonight, I'm hunkering down in the house. Storm has hit here, it is snowing and blowing outside. Checked temps, it is currently -8 with windchill of -26. Tomorrow is supposed to be the coldest day though. I will probably read, crochet, and maybe do some sewing. I am learning to sew and made my first fabric coasters yesterday, I may make some more today.

Sandra, please post the stevia cookie recipe. Weβre making room in the house to accommodate 6 large dogs during this freeze. Dh is doing last minute pipe wrapping today. Iβm cutting up an old comforter for him to use. Iβm going to be working on the quilt today. Also need to pick up one of my med refills if itβs ready (waiting for dr to okay it). If itβs not ready then theyβll give me enough to tide me over. Itβs for my diabetes.

EOTS: Do you use liquid or powder stevia? I am very interested in the 'sugar' cookie recipe. Okay, so, we've been using stevia for years - over ten years for sure, not how long. (I even grew it in Texas. Here I can get it to grow, but it definitely does NOT taste the same.) We MOSTLY use two forms: liquid (from NuNaturals) and the white powdered plain (super concentration of sweetness) from Trader Joe's (it's like other brands, just costs less). For baking, MY preference is to use Pyure Granulated. These cookies used the Pyure (granulated) and Pyure powdered, and one called for liquid sweetener. I promise to link to the original recipes and also share my results/opinions. Maybe this afternoon... I actually typed everything out so far, and my stupid computer ate my post. I was kinda mad π‘ but I just didn't have time to retype it yesterday. Maybe this afternoon. If not today, tomorrow ππ

We finally got above 0 Friday.
