I have signed up to serve dinner to the youth (20-30 people) on four Sunday evenings between now and Memorial Day.
I am interested in your thoughts.

Things I try to avoid:
I avoid the first two because the youth director gave me a heads up that parents almost always serve either pizza or pasta. I have noticed the boys mention tacos an awful lot, too. NO one complained about chips, but last time, I made monte cristo sandwiches (a baked version) and served chips... and THEN I noticed the dozens and dozens of snack size chips in the youth kitchen. I guess that just don't like them as much as we think. (I mean, TONS. There were probably 100 bags including my leftovers!).
My requirements? It should be tasty, reasonably healthy, but thrifty, especially with prices now. I'd also like to avoid some repeats. The baked potato bar was a HUGE hit, so I could repeat that, but I'd like to offer some new options, too.
I was thinking (maybe) soup and half sandwiches (they could take two halves if they wanted). I was thinking a huge vat of soup. I have a very big pot... I just don't want to spend the afternoon in the church kitchen (but maybe I'd have to...)
I've always either served cookies or sheet cake for dessert (always well received). I have a TON of cake mixes I bought on sale this summer, so anything I can use those for...
That's one. What other ideas do you have? There is an hour set aside for eating, and the kids actually eat (not gobble down their food).
