Every single month, I get items from the food bank I really don't use much, and end up giving away, but I would love some ideas for how to use instant potatoes BESIDES just making mashed potatoes, and ideas for pancake and waffle mix, also crackers. These are all high carb items that I have to use caution eating, but would like new ways to use them. I already got these suggestions off a Reddit sub, and some of these ideas are awesome:
or the pancake mix: lots of quick breads like banana bread zucchini bread or chocolate chip breads. Pancake mix is essentially self-rising flour and an oil plus some salt and sugar so all you need to do is add milk and egg and you have yourself quick bread. Also you can do biscuits but you have to cut in a solid fat to the pancake mix. I guess that means you could also do scones, waffles what you had a little extra oil but that should be on the instructions on the box. Follow the quick bread idea, and cornmeal to the mix, you got corn muffins or cornbread.

Instant mash? Thickening for soups or stews, substitute for bread crumbs in meat loaf. Coating for fried chicken. (I ran out of bread crumbs once but still had potato flakes, and didn't realize.). Hope this helps.

A friend gives me a lot of stuff from a food bank. I tend to get a lot of canned beans, veggies, dried beans, and pasta. I, too, am needing some ideas. I understand how some of the high carb things are put in the boxes since they tend to be cheaper but not good for us diabetics.

Any kind of beans can be cooked and pureed to make a spread. The texture is like hummus, but the flavor will differ depending on the beans. I once used pintos and seasoned with ketchup and mustard (no kidding) and used it as sandwich spread. It was okay (my take), the kids ate it like crazy. You could use whatever seasoning you like (maybe curry with lentils, tex mex with pintos). It is a good dip, too.
Instant mashed potatoes are great for potato bread (still lots of carbs, there. Not sure how to work around that.)
Pasta is a grain. Add a legume (like beans) and you get all the amino acids for a complete protein. Pasta e f*gioli is a great dish always, easy to make and easy to adapt to whatever beans you have. My mother only used red kidney beans to make it, but I've made it with everything except black beans (well, I did, but they turned the pasta purple!).

I use instant potatoes to thicken my potato soup, and in place of breadcrumbs to make zucchini or squash croquettes. Use them to make potato-crusted fish or chicken. As mashed potatoes, use for a topping for cottage pie or shepherd's pie. Plain crackers can be baked with ranch seasonings or other seasonings to make flavored snack crackers. There should be some recipes online. Crackers can be crushed and used for thickening or coating.
The beans can be cooked and mixed with other ingredients to make different bean salads. I LOVE black bean salad with feta cheese, vinegar and oil, and some other stuff added in like corn or onions. Bean hummus and sandwich spread is really good for dipping raw veggies. You could also make refried beans to use in Mexican dishes.
We once had a neighbor who often got food items she couldn't eat, from the senior center. In order to get the boxes of food, she had to accept everything in the box. So, she would give me the beans I'd give her home grown cucumbers and home-canned veggies. Maybe you could find a friend to "trade" with this way.
