For his class yesterday, DS3 made risotto and ratatouille.
The ratatouille really surprised me. First, he just put the vegetables on a big sheet pan and roasted them that way. It never occurred to me to prepare it that way.
Second, he didn't prep the eggplant. I always slice or cube, then salt, wait, rinse. I've read everywhere you have to do that to pull out the bitterness. I could tell by looking at the eggplant he hadn't, but it tasted fine. So I asked - just to be sure - and he was puzzled that I even asked. So, I guess you don't need to salt/wait/rinse to prevent bitter eggplant.

I've never been able to make a successful ratattouile. Tastes fine but too watery. I make in on the stovetop in a pan, but never thought of oven-roasting. Thanks. It might work!
