My sister is coming for a visit with my nieces and nephew. We're all so excited to see them. They'll arrive Friday for dinner and leave on Monday morning. I'm thinking: - Friday dinner: pasta and meatballs. DS3 has a meatball making class that day (perfect timing!) I just asked him to triple the recipe and we'll make a pot of regular pasta and another of gluten free.
- Saturday breakfast: breakfast casserole (egg based)
- Saturday lunch: sandwiches or eat out if we go someplace fun like the zoo or something.
- Saturday dinner: grilled burgers, oven fries, brownies. They eat way less meat than we do, and I figure everyone can have beef OR salmon burgers OR beyond burgers.
- Sunday breakfast: another breakfast casserole
- Sunday lunch: sandwiches again (yes)
- Sunday dinner: sheet pan meal with seafood or sausage (both are on sale right now), veggies, and rice.
- Monday breakfast: sweet rolls OR sausage biscuits and drinks they can take on the road (They're leaving early.)
I hope two breakfast casseroles isn't boring. Frankly, I want to minimize the dishes and pans for nine people eating.
Thoughts? Suggestions?

Well, well, well.
DS2 came home yesterday afternoon. He attended a meeting at his part time job, then worked a full shift at his regular job... Then came home to tell me that he ordered tamales from a co-worker (at the part time job) that he's bringing home next Saturday night! He forgot that we won't be five for dinner, but nine... Anyway, it will definitely become part of dinner.

Your plan seems good to me. Breakfast casserole twice is not boring at all, I would personally welcome that, especially when cooking for a crowd. When I was cooking for 17 a number of years ago when all the grandkids came at once, my grill was my friend, and I made pancakes for everyone for breakfast.

Your menu sounds really good. Breakfast casserole twice isn’t an issue. Maybe vary the meat i.e. pan sausage in one and crumbled bacon in the other. If not it’ll still be good since there’s many ingredients in them so shouldn’t be boring.

Thanks. The grocery store had cinnamon raisin bread and mini bagels on sale half price, so I picked those up. They can be alternatives or just more food for hungry growing (or already grown) kids.

You could do each of the breakfast casseroles with different flavor profiles if you wanted to have some variety. One could be ham and cheddar and the other could be more a southwest type one.
