Merrileem, what's your recipe for refried beans. Yesterday we ended up stopping for pizza since we were out running errands and wouldn't get home til around 7. So fajitas are tonight. Surprisingly eating doesn't trigger the vomiting.

Hello everyone! I think I'm going to make grilled chicken salads with berries for dinner tonight. Not sure what else I will serve with it though. Maybe I'll butter some of my sourdough and put some garlic on it and make garlic bread.

I decided to make chicken picatta for dinner since I have all the ingredients, along with risotto and broccoli.

I didn't end up doing the chicken piccatta; I was simply not up to it. I did simple grilled chicken over noodles Romanoff instead. Tonight since there is no class, I am staying home and making loaded baked potatoes.

There's a cookout at church tonight.
But I wanted to share about last night. It was the final monthly meeting of DS3's culinary explorers program. I knew there was a competition... but he forgot to mention that parents were encouraged to come and we'd get to sample food. Normally DH and I go off and keep ourselves busy. DS encouraged us to go eat some dinner while he set up, so we got a quick bite and went right back. We and other parents spent 90 minutes biting our nails while the kids were totally not in any big hurry to cook their meals. I seriously do not even know how DS got his food done in time. For example, as part of preparing a full meal, one thing they had to do was to start with a chicken, cut it down into the specific parts in the manner they'd been taught, and cook it in a specific way. I said to one mom - with 30 minutes left, he's still cutting up the chicken NO WAY will it be cooked in time, and she replied I KNOW!!!! But you know what... 4 out of 6 kids who chose to compete did finish in time.
Awards were given out for two competitions - one was for a scholarship for the entire program for seniors. The other competition had lasted over the entire year, with point for every thing from being on time to supporting classmates and (of course) points from last night's cooking competition. DS won that award! I think he was pretty surprised. We took him out for ice cream to celebrate.

We had thinly sliced turkey with gravy stuffing and beets a chocolate ensure. So grateful to be able to eat even a small meal 😊

I asked Ryan if he could stand yet another pasta dish for dinner, and since pasta is his favourite thing, he of course said yes, so tonight will be chicken tetrazzini with broccoli.
