Last night (for the 4th) we grilled steaks and corn on the cob and my SIL brought macaroni salad.
Tonight we are doing beefy mac and apple sauce - super quick and easy since we are both exhausted.

For the fourth, we had kind of a crazy combination of foods: - ribs (mostly slow cooker, finished on the grill)
- waffle fries (because I forgot to stick the regular potatoes in the other slow cooker before we left 🤦🏻♀️)
- salad
- homemade bread
- blueberry cobbler
- surprise #1: macaroni and cheese
- surprise #2: bacon (just strips o' bacon)
- s'mores
The surprises were leftovers from work that DS2 brought home.
For my part, I was uncomfortably full after all that - even taking tiny portions of the meat, fries, and mac-n-cheese. It was just a LOT of food.

This afternoon, DS3 is making fish en papillote. He says there will be a side dish and enough for us for dinner.
In the meantime, I am roasting the potatoes I forgot to cook yesterday. We can use them to supplement dinner if needed, but probably, I'll just package them up and freeze them.

Tonight I am making goulash with green beans. The potatoes Lyonnaise the other night were a hit; Ryan is not a fan of mashed potatoes at all, so it made a welcome change.

Tonight is pork chops and corn on the grill. I might cook up the last of the frozen veggies before they get freezer burn. Not sure what other side. It's going to be awfully hot, so I don't know that I want to do mac & cheese.

I'm really glad our stove is propane. Also have the woodstove but of course it's too hot for that. Our power has been out for past 5 hrs, and with downed trees taking down power lines, who knows when it'll be back on. Where we are we have the same light company as those in Houston and they have over 2 million customers without power. Anyway, I plan on steak, mac n'cheese, green beans.

Last night we ended up doing pork chops, zucchini and potatoes on the grill and then served a side salad.
Tonight will be bbq chicken, corn on the cob, mac & cheese and applesauce.
