I ended up making pan fried whiners and pork n'beans last night. Not sure about tonight since still no power so no a/c and heat index will be up to 205.

Tonight will be quick and simple egg rolls from the Asian market, which I will deep fry and then make a homemade dipping sauce (the sauce that the store makes is way too sweet!).

So Monday I went to a salad lunch fund raiser, and there were two versions of Ramen salad, which apparently is a salad often seen at midwest potlucks, but as a lifelong west coast gal, this was new to me. Would love to make it, but no clue how. I tried one recipe but it was awful, the ramen noodles were hard as rocks. Anyone have a clue how to make this? That is what I made for my dinner, but I have a feeling Ryan will be eating leftover pizza.

Well, Ryan ate it, but wasn't impressed either. I am going to ask around as to who brought the salad and see if I can get the right recipe. Meanwhile tonight will be Humble Helper with garden salad.

I just put some chicken breasts in to marinate. I used a Peruvian style marinade. DH will grill those and some corn. I'll make a Peruvian rice and a tomato & cucumber salad.

Tonight's ingredients are boneless pork chops, zucchini and salad. Depending on the rain, will depend on how it gets cooked and what starch I serve with it.

We never did get rain yesterday (and we desperately need it), so we grilled the pork chops, we grilled green beans instead of the zucchini, had a tossed salad and I heated up some baked beans.
Tonight is beef and rice burritos and a salad.

Tonight I am planning chicken marinated in mojo criollo sauce, and grilled. I will make Mexican rice, refried beans, and fruit.

I think I'm going to stew some Italian sausage in a tomato sauce and serve it with polenta.
That means dinner will look... interesting! This is a dish my mother would make on occasion, and we'd eat the sausage/sauce as a topping for polenta. But...
DH really likes Italian sausage cooked in tomato sauce. But he can't get his head around polenta as a savory dish. I guarantee, he'll have his polenta on the side and top it with butter and maple syrup. It's fine... but it makes me laugh to see the Italian sausage on one side of the plate and what I consider breakfast on the other.
