Tonight I am making Mexican gorditas with a spicy beef filling. First time trying my hand at homemade gorditas, so hopefully they come out ok.

We've having a recipe called chicken prevencal: put chopped red bell pepper and onion in the bottom of the slow cooker, top with chicken, top the chicken with chopped tomatoes, chopped basil, garlic, and kalamata olives.

Oh that sounds yummy! We are doing dirty rice and applesauce You know what? The chicken was meh. BUT... the side veggies I made were amazing. So simple. Slice 1 lb of carrots thinly and sautee in a skillet over medium high heat in olive oil. Add 1 lb of broccolini (I chopped it very roughly) along with 1/2 tsp of salt, 1/4 tsp red pepper flakes, and lemon zest. Sautee for 5 more minutes while moving everything around. Toss with 2 T. lemon juice. This was just so good. Not spicy at all. I actually ate a bowl of it for breakfast today!

I have madr chicken provencal before, but never in a crockpot. I can see why the chicken would be meh. I am making a concerted effort to make good use of my sourdough discard every week instead of just tossing it, so I am doing all kinds of creative things with it; one week, homemade pizza, last week, waffles. Tonight I am doing pigs in a blanket with it. Not sure about the veggie yet.

The pigs in a blanket were a hit with the sourdough discard; I was told it was the best I had ever made. Ryan is off with friends again this weekend, his weekend off, so I will heat up a Marie Callenders Chicken pot pie for my dinner.

Tonight I am doing a new recipe that I got from Mr. Food on TV. It sounded fast and easy and easy cleanup, win-win. It is foil wrapped chicken and vegetables with Good Seasons sprinkled on both. We will see how they come out.

I'll be curious to hear what you think of them, Merrileem.
We had grilled smoked sausage, oven fries, and brussels sprouts. I felt like dessert was a win-win. I peeled and chopped some very aged apples, mixed them with berries I got on sale and stevia I got on sale. Then, I used gluten free biscuit mix to make a shortbread batter which I plopped on top. It made a good looking and (more important) tasty cobbler. DH actually finished his portion. That is a BIG win since he rarely finishes a meal anymore.

It was a flop. The chicken was not very tasty and the veggies were mushy. Sad.

Pasta with chicken and pesto (DS2 & DS3 will like it, DH - who doesn't -is out of town, and I can make it from things around the house). I'm also baking bread (well, letting the bread machine bake it) from pizza dough that was left in the fridge and forgotten. I'll serve that with the pasta.

I got another UTI so I didn't end up going to class last night after all, so I threw some beer brats on the grill and fries into the air fryer and called it good. Tonight I am making pad Thai.

Well, last night's dinner was another flop. I tried to make things easy on myself by buying a meal kit for pad Thai, and it was pretty awful. I should know better; most of those meal kits for Asian food are truly terrible. Especially when you are used to homemade! Tonight I am using the leftover bean sprouts from last night and making Korean bibimbap. I have most of the ingredients, and what I don't have I can get across the street at Braum's.
