Last night we had potato-kielbasa bowls. To be honest, I made it because we had the ingredients. I only made one substitution - I used dried potato slices (rehydrated) and roasted them instead of the store bought diced potatoes. This was REALLY TASTY, quick, and easy. DS has a class today and he's making something called "Hot Pot." I always think of Hot Pot as a Chinese dish, but this sounds more like a chicken vegetable stew to me.

grilled burger patties - some will be beef, some will be turkey... whatever I find in the freezer! They'll be topped with provolone and a little horseradish sauce... mashed potatoes and salad for the sides.
I think there will be five people for dinner. Maybe. I thought yesterday would be three... then I was told four... then it was back to (and landed on) three. Both older boys are working AND going to school, but they've swapped roles. DS1 is working full time and going to school part time, and DS2 is working at least part time (he might be squeezing in full time hours, he's a machine) and taking full-time credits. All of DS1's classes and half of DS2's classes are in the evenings in-person, so they aren't home on those nights. We are too soon into the semster for me to have figured it out yet (and asking directly has not been helpful ð)

Dh plans on just having salad. His blood pressure has been high so he's getting serious about losing weight & cutting way down on salt. I'm going to have a bowl of cereal since I'm not that hungry.

Today... the plan is macaroni and cheese, only I don't have any GF mac so it will porbably end up being linguine (GF) in a cheese sauce. Not DH's favorite... but if he slices it up (which he will anyway), won't it be the same? ððĪŠ
I have no clue what quantity to make. Last night I expected 3, found out (in time) it would be 4... and #5 showed up an hour later looking for dinner. I'm trying to avoid leftovers because unless I say EAT THIS people just glaze over them.
I am pretty sure today will be 3... but I may send a text messages to those at work/school "reminding" them of the food in the freezer that they can pop in the microwave for a quick, hot, non-fast food dinner.

Last night I made tacos, tonight I will make fried rice along with chicken breasts covered in spicy peach chutney, and salad.

Last night we stopped at Pizza Hut after church. You can dine-in at that location. Decorated like the original Pizza Huts.
I'm making a big pot of pinto beans with chopped up tenderize steak mixed in instead of bacon.

THat sounds good, Gina. I've had a hankering for beans, but I was hopibng for the heat to break at least a little. I may go ahead and have beans and corn for lunch. We'll see what leftovers there are first.
Tonight, I'm putting some pork in the slow cooker. I haven't yet decided on how to season it. I'm sure we'l have salad on the side and maybe rice...

Our new fridge comes tomorrow, so we're having a hodge-podge tonight to clean out what we have. Dh is having a chicken sandwich with some veggies, dd1 is having homemade gluten-free zucchini pizza, and I'm having whatever is left after that. . .looks like a salad made with the last of the fresh veggies.
