I'm going to put some fish in the oven and serve it with spinach and maybe some rice - we'll see. There were a LOT of leftover potatoes from yesterday.

Yesterday I made a Hatch Green Chile sauce and decided to use it as a marinade for some chicken. We'll have that, grilled zucchini, rice and a tossed salad.

The sauce that I made on Monday worked pretty good as a marinade. It had also thickened up so we used it as a salsa as well.
Tonight is beef and rice burritos and I'll put the sauce out again.

"Taco bowls" which (I think) is code for taco salad. The nice thing is the meat is in the slow cooker and all the veggies are prepped except for the avocado. Should be a quick meal to serve.

- Egg bake. I'm putting this in the slow cooker using the dividers. One side will be ONLY eggs, sausage and maybe cheese (for DH). The other side will have a little sausage maybe and vegetables. Of course, the boys will eat either.
- Apple bran muffins. These were marked down this weekend, so I grabbed a pack and stuck them in the freezer for today.
- Tater tots, but only if someone else is willing to make them. I will be busy. DH & the boys are going to tkd tonight so they might want more food. I'll announce the option, but I'm not going to make them.

Breakfast for dinner sounds so good EOTS, but most "normal breakfast items I can't eat anymore due to my diabetes. Pancakes and hash browns used to be a regular on my rotation, but my poor old body can't handle the carbs anymore. Tonight will be burgers with all the extras plus french fries. Only a few for me, LOL!

Breakfast for dinner sounds so good It was okay - not terrible, but not AMAZING. I don't really want amazing every day. I think you could have handled the egg bake - it was protein, mushrooms, and bell pepper. The best part (for me) was that it came out great in the slow cooker. I put it in on low for six hours. I was surprised to find it still liquid after 3-1/2 hours, so I turned it up to high for the rest of the time, and it came out perfect. DH ate every bite of the egg bake and he rarely finishes everything on his plate.

DS is making some sort of lentil stew/dish with lots of veggies and rice. DH will eat the rice but won't touch the lentils, and the lentils won't fill up any of the boys, so I'm going to thaw some chicken and whoever is the most motivated will grill it 😆 DH seems to really like grilling and will usually volunteer if he picks up that is my plan.

DH started tapping on my door in a panic... he bought ingredients for the wrong week of class. We did NOT have everything he needed for the actual recipe, but we cobbled a bunch of things together and I told him this is his chance to see how the teacher can help... LOL
