GK do goose eggs taste any different from chicken eggs? I have never had anything but chicken eggs being a city girl. Tonight is kind of up in the air; Ryan still has a spot of tummy trouble so it will depend on what he wants, but I am thinking either black bean quesadillas and broccoli or pasta.

Goose eggs are a little richer tasting than store bought chicken eggs, as are free range chicken eggs. Goose eggs also have a much thicker yolk.

I ended up making chicken and rice last night and Ryan devoured it all, so it must of been just the thing. Tonight I need to make pasta as I have some fresh basil that is dying if I don't use it up making marinara.

I made this recipe for dinner tonight: www.nourish-and-fete.com/instant-pot-broccoli-cheddar-soup/#wprm-recipe-container-7305However, I used one whole head of cauliflower, a head of broccoli, about 4 carrots, 4 cups of broth, garlic and also had to add extra cheese and more black pepper. I quite liked it as a meatless, low-carb dinner! 2 of the 3 children liked it (they had theirs with bread rolls) and DH found it to be OK, too!

Last night I made pineapple chicken with rice and it was a big hit. It was very sweet, so I probably won't make it very often as it spiked my sugar levels. Tonight we had Italian roasted zucchini and chicken.

Tonight will either be a beef stir fry with sticky rice or Mexican casserole, depending on what Ryan is in the mood for with his still finicky stomach.

Here was last night's dinner. It wasn't very healthy, but it tasted good, they ate it all, and it used up a PILE of leftovers.
I mixed ground beef with onion soup mix, pressed it into a 13x9 pan, and baked it at 350 degress for 20 minutes.
DH had bought far too many bags of this particular type of hot dog roll he likes. It was an accident, but it's like we have hot dog rolls everywhere. They've been using them for sandwiches, but still they abound.
I took another 13x9 pan and lined it with opened-up hot dog rolls. I put the slab of cooked beef on top. I topped THAT with leftover pizza sauce (the boys make pizza weekly, and they ALWAYS have leftover sauce). I topped the sauce with mozzarella. Then I layered more opened-up hot dog rolls. Then I brushed those with melted butter mixed with garlic powder. Baked the whole thing for another twenty minutes.
I used a bench cutter to cut them into 12 servings.
Take my advice: either liberally spray the second pan with non-stick spray or line it with parchment.
P.S. This is a knife and fork dinner. Too messy to eat like sandwiches. P.P.S. We STILL have hot dog rolls.

Wow, maybe not healthy but it sounds really good! I would have to pare it down to my square pan for just the two of us, but I have tons of mozzarella in my freezer that I got from commodities, so I will definitely try this soon! Tonight will be Mexican casserole.

Hi Amber! Sandra, that meal sounds really good. Last night we had fish and shrimp. Not sure what I'll have tonight since I'll be home alone. Might make myself some oatmeal.

Sandra, that does sound good. Today, for a special Christmas dinner I made ham, mashed potatoes, green beans, corn, devilled eggs, cheeseball, and a veggie tray. No dessert for us as we got plenty of goodies and sweets in our stockings this morning.
