Ryan hates ham so I still have to cook tonight; I have some chicken tenders so I will likely make chicken fingers along with roasted sweet potatoes with onions and a big salad on the side. I will also serve up rolls left over from yesterday's dinner.

Tonight is stir fry. I used the leftover veggies from the veggie tray, added some cabbage and onion, and chopped up some of the leftover ham to make a pork stir fry which will be eaten with soy sauce and rice.

I am making homemade pizza for dinner, probably salad on the side, or maybe crudités instead.

The pork stir-fry was a huge hit with everyone and the kids requested I make it again tonight for dinner.

MM, I never repeat a meal even if my son begs, because I know him well enough that is something is a hit, I wait awhile before serving it again or he gets burned out on eating it too often! Tonight will be a simple meal of hot dogs and pork and beans, seeing as I have a medical appointment late in the afternoon.

Merrileem, I totally understand that! We can get by for a couple of day before they get bored. The good thing with the stir fry, is that it is a little different each time depending on which ingredients you use. I found half a head of cauliflower to put in it this time, which altered the taste a little.
I'm so happy with how far I stretched our little Christmas ham! We've had meals with ham slices, ham in stir-fry, ham and eggs, scalloped potatoes and ham, and now that we're done with ham, I boiled the hambone and made potato soup with the broth. The soup will be for dinner tonight.

Last night was a simple dinner of hot dogs, pork and beans, corn and peaches. Tonight I will make up for it; classic beef Wellington along with smashed garlic purple potatoes, and broccoli along with chocolate cream pie.

Today is DS2's birthday, and DH and I found some nice steaks massively marked down last weekend. So we'll have those with french fries and birthday pie (his request).

I have a nice chunk of meat that was too big to fit in the Beef Wellington I made New Year's Eve, and some potatoes about to go to seed, so I am going to cube it up and throw it in the fried potatoes to make hash tonight, along with spinach salad.

I found a recipe for mushroom chicken that sounds awesome, keto friendly. Though I am NOT following a keto diet, I am going low carb high protein and high nutrient. If it is as good as it looked on the recipe page I will share. I also found a recipe for a keto cake and frosting. I might try that too.

I slow cooked a pork roast all night, so we'll be having some BBQ for dinner this evening. It smells heavenly!
