Tonight I am fixing a new recipe that I hope will be a success. I will be making a version of Shakshouka with chickpeas. I may make a spinach salad on the side. Hm. I make a chickpea stew that I'm addicted to - I basically keep frozen portions in the freezer all the time. It's tomatoes, chickpeas, spinach, onions, garlic, and a little salt, cilantro and lemon. I bet I could add peppers... Could you share your recipe? Mine did not turn out well at all, too tomato pasty and thick. Not at all nice. I think tonight may be something simple like hot dogs and beans, I am too tired to do much else.

Here you go, Merrilee: Chop a small onion or two (to taste) and two cloves of garlic. Saute in olive oil until soft, but not brown. Add - 15 ounce of chopped tomatoes or sauce (I prefer sauce, but will use either)
- 3 cans of chickpeas (I have also used 4-1/2 cups of cooked chickpeas, cooked from dry)
- 2 tsp cuin
- 1 tsp dried ginger (or I have used up to a tablespoon of fresh, grated ginger)
- 1 tsp salt
After that's combined, stir in: - 10 oz fresh spinach (I think you could substitute frozen - I'm going to try that next time)
- a little bit of water - maybe 1/8-1/4 cup.
Stir a bit, lower the heat and simmer until the greens cook down. Then stir in:
- 1/4 cup chopped fresh cilantro. (I"ve been buying a fresh bunch and freezing it. It works FINE).
- 1 tablespoon lemon juice.
That's it, ready to eat. I portion it out and freeze it, and it thaws nicely.

This is how I make it for my family of 6
1 lb sausage 2 jars spaghetti sauce 2 boxes elbow pasta (12 oz eatch. I use gluten free) 1 8oz block cheddar or colby jack cheese
I just brown the sausage and drain it, then add the sauce. I doctor the sauce how I like it (I always add some onion, garlic, a little sugar, and a little Parmesan to it) and heat it up. Once the sauce is bubbly, turn off the heat and stir in the cheese. It should be melty, but not disappear into the sauce. Add your cooked pasta and it's done!
Finishing up my birthday weekend tonight with grilled marinated pork chops, noodle with homemade Alfredo sauce, corn on the cob, cucumber salad, and strawberry shortcake! yum!

Well. it is Cinco De Mayo so I guess a Mexican meal would be in order, but Ryan has been wanting Hungarian goulash, so I will make that with noodles. Not sure on veggie yet, but may rob my garden of some of the arugula that is looking ready to harvest.

Tonight I am making a Mexican style pull apart bread loaf that I got the recipe for on TV. I have no clue what to go with it, probably black beans and ?

The pull apart bread took some doing and was messy, but it was a hit. I think I will just make a dessert and we will do leftovers tonight.
