I put a pork roast and potatoes in the crock pot out on my porch. Now I have some brussels sprouts in the instant pot. But really, it's too hot to eat this meal

Cool and overcast today so I am fixing Chinese hot and sour soup for dinner along with some egg rolls on the side.

Mesquite seasoned hamburgers, fries, and green beans. Homemade apple pie for dessert. Last night I made a beef pot pie.

Yesterday we went to my parents house in the early afternoon for a Father's Day cookout. Before we left I put a pork roast in the crock pot and made mashed potatoes, intending to have them for dinner. No one was really hungry when dinner time rolled around so those that were hungry fended for themselves and I saved the pork roast for tonight. So tonight is the pork roast, mashed potatoes, gravy, corn, and steamed broccoli.

The heat is on again, so we are doing quick and easy taco salads tonight with fruit smoothies.

I lined a sheet pan with parchment. Then I laid in it: - three acorn squash, peeled, seeded and cut into chunks
- chicken breast, cut in chunks
- cauliflower gnocchi (yuck, but it's gluten free for DH)
- sweet potato gnocchi (very taste)
Drizzled it all with a mixture of olive oil and butter, and sprinkled with Trader Joe's "Chickenless" Seasoning (tastes like chicken). Put it in the oven at 425 for about 20 minutes. I was surprised, the chicken was a little overcooked but everything else came out just right.

Another busy day! 🤷♀️
The neighbor gets one of those dinner subscription boxes, and sent over what she didn't use (we're getting a box of "leftovers" from her each week LOL. I put potatoes, baby carrots (thanks to her) and a pork roast in the slow cooker. I have mini-muffins cooking in the countertop maker, and I sliced oranges.

I made a new recipe for hard boiled eggs in coconut curry sauce. It was OK, but I prefer the much simpler sauce recipe I got off the I Dare You To Eat It website years ago. We also had frozen strawberries that we picked last week, rice, and watermelon.

Yesterday was so nice out, I decided to have grilled chicken. Tonight we're having grilled marinated pork chops, cottage potatoes, corn fritters, and squash casserole using squash from the garden

I watched this video www.facebook.com/watch/?v=625107068218911 (Sorry it's on Facebook). It was a bit more work than I wanted to do, so I used rehydrated sliced potatoes and layered everything in the slow cooker. I used half chicken, half ham. I also put sliced onions in half (DH doesn't mind the flavor, but he doesn't like the texture of onions). It smells good.
