I mixed bulk sausage with some gluten free stuffing mix, then used that to stuff two butternut squash (four halves). I think I have some cauliflower I'll cook, too.
We used to use the sausage/stuffing mix more often, my family loves it. I stocked up on gf stuffing mix at Thanksgiving in case I couldn't find it later. I need to make this more often.
That said, I'm bushed and not every hungry. I will probably just have a salad and cauliflower.

I made tacos with spicy chicken, roasted sweet potato, black beans and cheese on corn tortillas and put in the oven til melty. So good! Topped with Frank's hot sauce.

Sandra- tell me more about the sausage/stuffing. Do you make up the stuffing mix and then mix with the sausage? Do you cook the sausage before you mix it with the stuffing? Do you bake the squash after you stuff it? I'm intrigued!
Not sure what I'll be making today. I've been making things for the freezer all week and I don't really want to cook, but I'll come up with something, I'm sure!

I use one pound of sausage to a half a box of Trader Joe's gf stuffing mix. It's the exact same idea as Stove Top Stuffing. I'm just clairyfing because (before DH went gf), I think I may have used one pound of sausage to a full box of Stove Top. Anyway, put half the bag of croutons in a bowl and half the bag of seasonings. Combine with the sausage (I use my hands). It reminds me of making sausage balls. LIke sausage balls, it's really simple but bakes up nicely. We really, really like this in puff pastry, but so far, I haven't found any that's gf 😉 so stuffed squash it is.

I have seen gf puff pastry at either Wegman's or Whole Foods, but can't remember which. I don't go to either often.
No TJ's by us, but Aldi sells gf stuffing mix. I will have to give this a try once the mix is back. How long do you bake?

Mother-in-law coming down this afternoon. Gonna be making homemade chicken alfredo w/ salad & garlic toast. For dessert, I'm making a lemonade pie.

Jennilee, since TJ's & Aldi's have the same parent company, I wouldn't be surprised if it's the same stuffing mix. I will definitely look for gf puff pastry next time I'm in Whole Foods. We don't get there often much anymore, but I'll remember for sure when we go. I did the squash in the slowcooker on high for about two hours (until the squash was soft). I used the bake the stuffed puff pastry for 30-40 minutes at 350. I'd use an eggwash before baking and it would "look right," just browned but not too. You could also use a meat thermometer to check the temp of the stuffing.

Tonight will be grilled marinated chicken, broccoli casserole, Lima beans, one more thing that I'm not sure about yet. Perhaps some squash if we have some ready for harvesting. And a chocolate silk pie.
