Any experience using this?
Growing up, I only head about buckwheat pancakes. For a while, I grew buckwheat microgreens (no success at this house growing microgreens or sprouts - long, different story).
Anyway, hearing on the news about the broad use of buckwheat in Ukraine and Russia, I looked up spme recipes. I found a gorgeous looking yeast bread recipe.
The thing is, buckwheat is gluten free, and DH is supposed to avoid gluten (he's been slacking a lot lately). I'm going to try some buckwheat flour and see how it goes.
Any other experience here with buckwheat?

I love buckwheat pancakes, but it is very different from regular ones; they tend to be heavier than ones made with regular flour, and are very dark, almost black in appearance. Think Russian black bread if you have ever seen that. The flavor is different, so I can't really describe it. Might be an acquired taste for some, but I have always liked them.

I read that you can purchase hull-less groats or flour made from the hull-less groats. There were pictures of the two flours side by side; the hull-less flour was significantly lighter. I don't mind either (but DH might). Anyway, I orderd some hull-less groats. I figure I will grind some for flour and see how it bakes up. I figure I can also use the groats to make hot cereal or even a rice-pudding style preparation.
