Ryan was finally able to chew his food last night for the first time! We had mac and cheese and salad. I have tons of leftovers in the fridge and wore myself out yesterday trying many new recipes from my diabetic cookbook, so no cooking today. We will either have chili or leftover mac and cheese or two kinds of leftover soup, many choices.

Ryan had a hollow leg last night so most of the leftovers were happily devoured. I gave him his choice of his first really solid food meal, and he chose pot roast.

I picked up some chicken leg quarters on sale so they got simmered in the crockpot with left over pulled pork sauce I had in the freezer. Steamed rice on the side and I think I'll make steamed broccoli too.

I need to find a way to make a lightened up version of pot roast. I actually got kind of sick on it last night; I seldom eat potatoes anymore because it is worse for my blood sugar levels than almost anything. The combo of potatoes with a heavy gravy-like sauce almost killed me. Ryan is not a big lover of potatoes anymore anyway; he much prefers sweet potatoes which are much healthier. Not sure of dinner tonight but it will likely involve a lot of salad!

We had English cottage pie. So yummy!

I cleaned out the freezer and got a happy surprise; a large container which contained a mystery substance which turned out to be a large amount of hot and sour soup. We will have that for dinner along with some Chinese dumplings.

It's Wednesday, adn we'll pick up lasagna from church. However, the boys have been acting like church suppers are a side dish, so I had DS2 put meatballs and sauce in the slow cooker to help fill them up.

We have a meatloaf in the oven and a butternut squash. I might add some green beans to round it out.

The meatballs & sauce came out great. I didn't have the pasta, but put a spoonful of sauce into a bowl of soup I made for myself. It was outstanding - and it was just the Cheap & Easy tomato sauce from Hillybilly Housewife.
Hillybilly Housewife is how I first found PH 16 (almost 17!) years ago.

I think dinner will be steak I got in the marked down section of the grocery store. To go with it I'll fix some brown rice and beans.

Eye, I believe HH is how I found this site as well! Some of Maggie's old recipes are still standard favourites at our house. Tonight I am making lamb vindaloo along with basmati rice and salad.

I made chicken a la king. I found a recipe in the local newspaper and decided to try it. When I was a kid, I used to eat this over toast and it was a treat.
